One of my favorite things to make in the fall is pumpkin bars.
These pumpkin bars are moist with just the right mix of cinnamon and pumpkin topped with cream cheese frosting... melt in your mouth good.
The best part of these bars is that they are easy... really, really easy.
Pumpkin Bars
recipe from Mary Jantz
4 eggs
1 c oil
2 c sugar
1 can pumpkin
Mix in a large bowl
Add:
2 c flour
2 tsp baking powder
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
Pour into a jelly roll pan. Bake at 350 degrees for 22-25 minutes. Frost with cream cheese frosting.
Frosting:
recipe from Cindy Heuer
8 oz cream cheese (softened)
1/4 c butter
1 tsp vanilla
1 lb powdered sugar
Mix together cream cheese, butter, vanilla and powdered sugar until smooth. If the frosting is too thick add milk by tablespoon until it is the desired consistency.
Yum!!! I love the recipe for cream cheese frosting. I'll have to try that on our pumpkin muffins!

Jennie - yes it is... i thought i put her name on there. oops! i will go and edit my post so i can give credit where credit is due. mary made the best bars. now if only i could be like her and bake then give it all away :o)
